HIDA-GYU : the renown beef of Gifu

Japan is well known for its delicious Kobe beef, but it should not put away other regions also proud of their high quality meat.
Hida-gyu beef is raised during a period of 14 months in the natural landscapes of Gifu Prefecture.
It is known as one of the best meat in Japan, its taste and its tenderness having been renewed by the most important meat certification associations of the country like the “Japan Meat Grading Association”.
The best parts of the animal as beef sirloin are often prepared simply as a steak.

The other parts are cooked following traditional japanese recipes as sukiyaki (a japanese stew topped with beef meat); the shabu-shabu (beef is cooked in boiling water and often eaten with vegetables), the yakiniku (grilled meat eaten with different sauces as miso, soy sauce), and more particularly in Hida the Hoba miso which consists in serve the meat on a magnolia leaf covered with miso.
